Kakheti is often called the pearl of Georgia by winemakers and viticulturists. Indeed, 65% of Georgian vineyards are located here, and 80% of industrially processed grapes come from Kakheti as well. Both high quality European and Kakhetian traditional wines are made from Kakhetian grapes. Kakhetian technology involves making wine using Qvevri. This ancient Georgian method was included in the UNESCO World Heritage List in 2013. The most common main varieties here are Rkatsiteli, Kakhetian Mtsvane, Saperavi, Kisi.
